Blue Cluberry Pancakes
Ingredients:
1 cup sifted flour
1 egg, 1 teaspoon baking soda
2 cups buttermilk
Optional: banana, blueberries, chocolate chips
Maple syrup, butter
Directions:
1. In the mixing bowl beat the egg a little with the whisk. Then add the milk, flour and baking soda and mix well until smooth.
2. Add blueberries to the batter. If frozen, drain very well. The frozen berries will turn the batter blue. If using fresh berries, mash them a little to let some juice out to turn the batter blue.
3. Heat the skillet over medium heat. Brush with butter.
4. Ladle a 4 inch circle of batter into the pan. Then ladle five small circles, not to far from each other, to create what looks like a paw.
5. Once the edge of the pancakes are dry and the top of the pancake forms little bubbles, use the pancake turner and carefully turn over the pancake. Cook about one more minute. Remove from the pan to a plate.
6. Continue making pancakes until all the batter is used.
7. Serve warm with maple syrup, jelly, powdered sugar or plain.
Be creative making other shapes and use other ingredients such as banana slices, chips, pre-cooked apple slices etc.
